  • 1 (12-ounce) can unsweetened coconut milk
  • 3 cups vegetable stock
  • Juice of 1 lime
  • 2 tablespoons chopped fresh cilantro leaves

DIRECTIONS:

  1. In a big saucepan of just one 1 1 /2 cups drinking water, cook rice in accordance with package instructions; reserve.
  2. Melt butter in a big stockpot or Dutch stove over medium high temperature. Add shrimp, sodium and pepper, to flavor. Cook, stirring sometimes, until red, about 2-3 moments; set aside.
