These energy oats ball snacks have saved me during this “no-school-isolated at-home-with-4-kids” part of my life. You would think my children are avaricious creatures who have not eaten in weeks since they simply tidbit and nibble throughout the day.

Yet, because of these energy balls, which I have been making at any rate 2x each week recently, my children have a get and go bite that they can get themselves, and they are fairly nutritious for them and will keep them full for like 10 minutes.

Ingredients

  • 3 cups quick oats
  • 1 cup creamy peanut butter
  • 1/2 cup mini chocolate chips
  • 1/2 cup honey

Instructions

  • Combine all ingredients into a mixing bowl and stir together well until combined. Place the bowl (covered with lid or plastic wrap) in the fridge for 20-30 minutes.
  • Roll into balls (slightly smaller than a golf ball). Eat right away OR store covered in the fridge for several days.

Notes

To make measuring honey easy, spray the measuring cup with cooking spray before ad ding the honey. When you pour it into the bowl the honey will slide right out! It’s best to use regular peanut butter because it has more oil, fat, and it’s softer, which will hold together well without drying out. Some natural peanut butters (like Jif) actually might work because it has more oil than other natural peanut butters.
