Bacon Ricotta Crostini with Fig Jam:

  • 4 slices bacon
  • 3 oz. ricotta cheese
  • 3 Tablespoons fig jam
  • 4 slices bread

Salami Cream Cheese Crostini with Olives:

  • 4 slices salami
  • 3 oz. cream cheese
  • 1/3 cup sliced olives
  • 4 slices bread
  • olive oil and garlic – for the bread

Shrimp Avocado Crostini:

  • 8 large raw shrimp – seasoned with salt and pepper, and sauteed
  • 1 large avocado
  • squeeze of fresh lime juice
  • kosher salt – to taste
  • 4 slices bread
  • olive oil and garlic – for the bread

Instructions

  1. Slice and bake the crusty bread. Using a serrated edge knife, slice the bread into thin slices. Make sure you use a nice crusty bread that holds up well to toppings. Pour some olive oil into a small dish, and lightly brush it on both sides of the bread. Lay it on a parchment covered baking sheet. Bake until golden brown, and then flip and repeat on the other side. When bread is browned, take the peeled garlic clove and rub it on one side of the bread. This will infuse the garlic flavor into the bread.
  2. To assemble the prosciutto and Goat Cheese Crostini with Apricot Preserves: Top the prepared bread with softened goat cheese, apricot preserves, and prosciutto. I recommend letting the cheese sit on the counter until it comes to room temperature.
  3. To assemble the Bacon Ricotta Crostini with Fig Jam: Top the prepared bread with softened ricotta cheese, fig jam, and bacon. I recommend letting the cheese sit on the counter until it comes to room temperature.
  4. To assemble the Salami Cream Cheese Crostini with Olives: Top the prepared bread with softened cream cheese, olives, and salami. I recommend letting the cheese sit on the counter until it comes to room temperature.
  5. To assemble Shrimp Avocado Crostini: Top the prepared bread with smashed avocado (plus lime juice and s&p) and sautéed shrimp. The avocado will eventually brown, even with the lime juice, so prep these right before party time.
  6. Place the crostini on a large serving dish, and enjoy.
