  • 2 lbs fresh leaf spinach or 1 lb frozen (thawed)
  • 2 tsp salt
  • 4 tbsp butter
  • 1 medium yellow onion minced

Instructions

  1. Season a large pot of water with the 2 teaspoons of salt and bring to a boil. Add the spinach and cook just until wilted, about 1 minute.
  2. Drain the spinach in a strainer or colander. Rinse with cold water until cool and squeeze the water from spinach. Chop the spinach into a 3/4 inch width.
  3. In a large skillet over medium heat melt the butter with the garlic and onions. Cook for 8-10 minutes or until the onions are translucent.
  4. Season with the salt, black pepper and add the flour. Mix over low heat and cook for 2-3 minutes.
  5. Add the half an half and cook until boiling. Add in the cream cheese, stirring to melt and incorporate, about 6-8 minutes or until the mixture has thickened.
  6. Add in the spinach, Parmesan cheese and nutmeg. Stir to combine, serve hot.
