Tasty chorizo and crispy fried potato tacos with salsa verde, onions and cilantro!

Today is Cinco de Mayo and I am celebrating with these delicious chorizo and potato tacos with avocado salsa verde! These tacos are so natural to make! You just fry some diced potato until firm and brilliant earthy colored, add the chorizo and onions and cook some more prior to tossing everything into some warm corn tortillas alongside new diced onion, cilantro and the salsa verde! I utilize hand crafted chorizo and natively constructed salsa verde when I can however locally acquired makes things significantly simpler! I like to add cool and velvety avocado to these tacos, either diced or pureed into the salsa verde and I polish things off with a crush of new lime juice! Have a delectable Cinco de Mayo! Remember singed eggs!

ingredients
  • 1 cup salsa verde
  • 1/2 avocado
  • 1 tablespoon oil (or bacon grease!)
  • 1 pound potatoes
  • 1 pound fresh Mexican style chorizo sausage, casing removed
  • 1 onion, diced
  • 3 cloves garlic, chopped
  • salt and pepper to taste
  • 12 small corn tortillas, warmed
  • 1 onion, diced
  • 1 cup cilantro.

directions
  1. Puree the salsa verde and avocado in a food processor.
  2. Heat the the oil in a large pan over medium high heat, add the potato and cook until lightly golden brown on all sides, before adding the sausage and onion and cooking until the chorizo is cooked.
  3. Add the garlic and cook until fragrant, about a minute.
  4. Serve the chorizo and potatoes in the tortillas along with fresh diced onions, cilantro and the avocado salsa verde.

Option: Add your favourite taco toppings!
