  • 1 small red onion, chopped
  • 3 strips bacon, cooked and crumbled
  • 1 avocado, cut into strips
  • 1 tablespoon cilantro, chopped
  • 1 can (15.25 ounces) corn
  • 1 cup Jalapeno Ranch Dressing (link to recipe in notes)
  • 1 cup Crispy Fried Jalapenos (link to recipe in notes)

INSTRUCTIONS

  1. In a medium bowl, combine shredded chicken, chili powder, lime juice, cumin, cayenne pepper, and garlic powder.
  2. In a separate large bowl, combine romaine lettuce, tomato, onion, bacon, avocado, cilantro, corn and 1/2 jalapeno ranch dressing. Add in chicken. Toss to coat. (Add more dressing to taste.)
  3. Top with crispy fried jalapenos.
  4. Serve Immediately.
