INGREDIENTS

For the dressing up:

  • 1/2 mug extra-virgin essential olive oil, or canola oil
  • 2/3 cup newly squeezed lime juice
  • 3 tablespoons burgandy or merlot wine vinegar
  • 2 cloves garlic, finely minced
  • 1 1/2 teaspoons salt
  • 1 teaspoon freshly floor black pepper

For that pasta salad:

  • 8 ounces corkscrew pasta, cooked in salted drinking water according to bundle instructions & drained
  • 2 cans (15-ounces, each) dark beans, drained & rinsed
  • 16 ounces handbag of iced corn
  • 16 ounces cherry or grape tomatoes, quartered (Or around 2 extra-large tomatoes, seeded & cut)
  • 2 new jalapeños, seeded, all membranes eliminated, & finely diced, optional
  • 1/2 cup new cilantro leaves, cut, plus extra for garnish

INSTRUCTIONS

  1. Make the dressing up by whisking all the ingredients together inside a medium dish until thoroughly integrated, or shaking them in a jar having a tight-fitting lid. Reserve.
